Holiday Peppermint Coconut Cream Parfaits

Ingredients:


- 1 bag of Maxine’s Heavenly Chocolate Peppermint Candy Cane Cookies

- 1 tsp Vanilla Extract

- 1 TBS Peppermint Extract

- 2 TBS Powdered Sugar

- 1 can Organic Full Fat Coconut Cream

- ¼ cup Crushed Peppermint Candies

- 1/2 Vegan Chocolate Bar for shavings


Instructions:

1. Chill coconut cream overnight in the refrigerator.

2. Using a hand mixer in a medium bowl, mix peppermint, vanilla, powdered sugar, coconut cream until fluffy.

3. Using a pretty vessel like a martini glass, crumble 1 cookie, add a layer of cream, crumble another cookie, then add a layer of coconut cream.

4. Using a vegetable peeler, create chocolate shavings and top with crushed peppermint candies.

5. Garnish with a square of chocolate and a mini candy cane.
