- 2 medium sweet potatoes (cut into half-inch chunks)
- 2 TBS olive oil
- 2 TBS maple syrup
- 1 tsp chili powder
- 1/4 tsp cayenne pepper
Whisk together olive oil, maple syrup, chili powder, cayenne pepper, and salt.
Toss mixture with sweet potatoes.
Roast on a rimmed baking sheet at 425 F for 35-40 min. until golden brown and tender, stirring halfway through.
