Pasta Fagioli

INGREDIENTS:


- 2 cups of cooked pasta

- 2 cups of tomato sauce

- 1 cup of minced carrots

- 4 cups of broth (chicken or vegetable)

- 2 handfuls of spinach

- 1 15-oz can of cooked cannelloni beans (rinsed and drained)

- 1 cup minced onion

- 1 TBS dried parsley

- 3 minced garlic cloves

- 1 TBS oregano

- 1 TBS dried basil

- 1/4 tsp red pepper flakes

- 1 large bay leaf

- 2 TBS olive oil

- 1/2 tsp salt

- 1/2 tsp black pepper

- 2 cups of water


INSTRUCTIONS:

  1. Place pot on stove at medium heat.

  2. Once heated, add olive oil, onion, garlic, and carrots.

  3. Sauté for about 5 minutes.

  4. Add in your tomato sauce, spices, stock, and water.

  5. Bring to a boil, then reduce the heat and simmer for about 15 minutes.

  6. Add beans, and pasta, and simmer for about 5 more minutes.

  7. Once beans and pasta are heated, turn off the stove, add spinach, and stir until wilted.

  8. Option to top with freshly grated parmesan cheese!
