Strawberry Basil Arugula Salad

INGREDIENTS

  • 3 tbs Olive Oil
  • 2 tbs Balsamic Vinegar
  • Kosher Salt (To taste)
  • Freshly Ground Black Pepper (To taste)
  • 5 cups Arugula (About 5 packed cups)
  • 2 cups Strawberries (Sliced)
  • 1/2 cup Roasted Pistachios
  • 3 tbs Goat Cheese (Crumbled. Use more if desired.)
  • 2 tbs Fresh Basil (Chopped)

INSTRUCTIONS

Whisk the olive oil, balsamic vinegar, a pinch of salt, and a few grinds of black pepper together in a large bowl. Add arugula and strawberries and toss to combine. Add the pistachios and basil and sprinkle with goat cheese and toss again lightly.
